Like most folklore, the history of the jack-o'-lantern varies a little bit depending on who's telling the story. But all stories involve a clever drunkard that pulls one over on the devil.
Legend has it, in 18th-century Ireland, a foul-mouthed drunk and disreputable miser named Stingy Jack asked the devil to go have a drink with him. The devil obliged and when the bill came, there was that awkward moment that we're all so familiar with.

I read that there are literally tons of carved pumpkins that go into landfills and someone proposed an alternative way to use them. Take them into the country to a woods and break them open and lay them on the ground about 10 yards in so animals that come to them are not too close to the road. There are a number of animals that will eat them if they can get to them.

Most of our neighbors find the squirrels and the foxes get them by the end of the week following Halloween if they don't go after them before that!
