Catfish Filets (cleaned and deboned)
⅔ cup
Cornmeal
¼ cup
Whole Wheat Flour
1 ½ teaspoons
Seasoning Salt
½ teaspoon
Lemon Pepper Seasoning
¼ teaspoon
Paprika
¼ teaspoon
Cayenne Pepper (optional)

Eggs
3 tablespoons
Buttermilk
2 teaspoons
Tabasco Sauce
add
Lemon Wedges
add
Tartar Sauce
add
Extra Tabasco Sauce
4 cups
Frying Oil
Directions
1. Combine the wet ingredients in a large bowl - whisk the eggs, buttermilk, and hot sauce together.
2. Now, soak the catfish fillets in the egg mixture. Make sure the fillets are fully coated. Let that sit while you mix up the dry ingredients.

A flathead catfish isn't a bottom feeder either, it's an aggressive predatory fish. The state record for a Flathead is 97 LBS, but fish in that upper 80's low 90's are not uncommon. An one hundred pound catfish is freaking huge, it you have never seen one.
We catch channel catfish incidentally while striper fishing. They don't get as huge as Blues and Flatheads. We don't throw them back and they are in the pan along with the striper at the next fish fry. A striper is a Rockfish for you coastal guys.
