Holy crap, that was NOT gumbo. That was broth, a shrimp or 2, an okra, and a pack of bloody lies. I'd get a well justified flogging in the middle of Jackson Square on St. Patrick's of all days ironic for cooking that and calling it gumbo.

SGT John " Mac " McConnell - People make roux to differing degrees, by older rules of thumb anyway. The closer you got to southern Louisiana, the darker the roux got is the way I heard how it went. But either way there was a roux to thicken it. That stuff in the video looked like chicken broth and likely was. Don't get me started on the lack of rice or how little there was in the meat and veggie department. Damn thing didn't even have the trinity (bell pepper, celery, and onion) for Christ's sake!

I'd totally try their stuff, but I'd want it done they way they actually eat it. I'd actually make the gumbo myself in some kind of foreign exchange gesture, just so it would be a fair judgement. But if they liked that "gumbo", they'd love it even more if done properly.
