Thank you, my friend SGT John " Mac " McConnell for sharing the music video of Booker T. And The M.G.'s performing "Green Onions" in 1967.
Booker T on organ, Al Jackson Jr. (drums), Steve Cropper (guitar), and Donald "Duck" Dunn (bass guitar).
Anybody familiar with the Blues Brothers movie recognizes the names of musicians Steve Cropper (guitar) and Donald "Duck" Dunn (bass guitar).

Hmm ... Green Onions ..

Clean and cut green onions in 2” batons with a inch of green stem
And inch of white top.
Cut crosswise an X into top(white) of onion Figure 4 to 5 batons per guest.
Prepare some slices of garlic toe
Not to thick
Cook some bacon pieces to medium done and set sside
When ready to cook onions n garlic
add partially cooked Bacon. Use rendered liquified bacon fat to sauté onions n garlic and bacon to al dente state. Make sure fat is just starting to sizzle a little when adding ingredients. Using tongs, spoon with small holes so garlic doesn’t fall through when transferring at beginning or end.

make sure onions are same diameter of thickness at least
1/8” thick.
