Spent almost 20 years in Cajun country and married a local. The ingredients in the article represent the basics and I recognize the article is pointing out the increased cost, but gumbo is one of those dishes where recipes don't do it justice. Each cook has their own touch and, while it was originally a "let's use all of these leftovers before they spoil" type dish, it's progressed to a work of art. When my wife cooks it, it has to be a special meal because of the cost, but it's oh so good!

A place in Belle Chasse was where I had my first real gumbo. Lil G's was a great place to chow down on Nawlins cuisine. Gumbo, jambalaya, alligator, oh and the bread pudding was to die for!
