I carry everywhere, I'm legally allowed to carry include places that post non-legal signs restricting my constitutional right to carry. My weapon is never easy see but is immediately assessable to my hand.
I find it odd, "IF" they do not want to serve s someone they can refuse BUT only if he shows the weapon in some way they can see it. So he cannot be charged for carrying - unless he brings it out to conduct an illegal manner. Simply carrying a lawfully concealed weapon IS NOT cause for arrest nor detention.
In this case he protected others and himself + if he hadn't have used it more people would be dead or wounded. Legally he both carried it correctly (since no one knew he had it) until he legally used it against the attacker.
