One of the academies stole the AF Falcon one year and injured it and it had to be put down so I am not a fan of the "mascot theft" practice.

Nope. Too much room for error and disastrous outcomes in this era of stressed out animals and over-supervised cadets and middies being goaded by tacs and faculty "grads" who want them to pull off a successful mascot theft.

When the West Point mules are retired, they go to Fort Huachuca AZ to be cared for by the 11th Cavalry ceremonial troop. They get really good care in a big place to run around. While I was stationed there at least three times a week we would go see the mules, give them carrots and apples and make sure they had good water. Having been around people for so long, the mules were very friendly. They liked getting a good scratch.
