Had a cook loaned to me from the other shift(personally I think he was sent to sabotage my entree support(gravy). .. I had to stretch our gravy and I had just the solution: I got the other kettle going first with a little boiling water and mixed in beef and chicken base
(It had to serve two entrees). And got a pasty sauce and one I had granules broke down I increased the heat and water and got it boiling
Once it got hot enough I made up
another small paste of beef n chix
Base and gradually added flour n corn starch together and some more water [cool]. And had a good flavored slurry, oh and some Worcestershire.. any way the new pot was boiling good and I added the slurry and we had a decent semi glossy gravy once the flour starchy taste wore off. I s’pose I could of done another roux . The timing to do so wasn’t much different, a lot was going on and didn’t have time for a lot of questions.. so he asked me why I didn’t just add more water and make a slurry of flour n water.. i’ s’pose.. would of needed still more flavor.. and yes we had 2 kettles to clean.. I just thought making a new smaller pot was better than doctoring the first kettle. If I’d doctored the 1st kettle it is hard to get the flavor back to it’s original
State..sometimes.. the 2d short kettle turned out good and guests were happy .. we hadn’t run out, just very low, I thought the girls were giving way too much.. and people coming back up and getting a small bowl. We had Reg bowls and little smaller and then the side
Dishes.. stuff like gravy spills out of them too much so a small bowl about2/3 full is good.. Some just grab a big one .. give it to them and keep them happy.. happy !
If I got to repair s’thing like gravy
Or a soup.. you just can’t water it and stretch it, cause all you got is watery soup n gravy..

I seen breaddd pork or chicken, veal with big knots of fried flour.
A lot ends up in bottom of fryer if deep fried . The chicken per se..
why I use a 4 pan method : 1. Flour
first 4” 13x9 pan(light season) dust off excess flour before egg wash next 4” 13x9 w/ egg/cream wash with 1/2 2” perf. Pan to drain excess
Egg/cream wash then breading pan and then sheet tray or how ever els youfinish cook’g. Every so often
Shakeout excess big crumbs in screen box over the bread’g pan and bread some more cutlets . Saves on making more bread crumbs .. got a nice breaded

(Appearance, taste ) is what got us in our tops in TAC and SaC when I was there.. . It seemed when it came to getting that Hennesy we got road blocks.. In SAC some of us had to rotate back to the missile launch command posts . No wait a couple days more.. had to rotate then.. in TAC we had a Deployment and had to go to Sudan one time and Cairo West.. so the next runner-up got the Hennesy. it was a team from 2 different bases each time.. That’s just the luck of the draw and we didn’t have the Luck !
I’ve had people that had good attitudes and I took care of them.
S’ome has a bad ‘rude whines and ask why they don’t get a 3 day weekend or a half hour or hr. off early on their Friday .. I asked what they done to think they deserved it..
they said they done e’thing I had them scheduled for on the cook sheet.. yeah, and you whined throughout the whole shift. We had 2 on deploy.. one on leave in Mo. due back in couple days and he’s coming back early to help.. it’s not a national emergency but he’s coming back ! Would you do that?

he was pretty quiet when he come back.. they ended up sending him to mental health ward (sunny brook farm or la-la land.. he gets to talk to the sjw psycho therapists.. they sent him bCk and the Cmdr discharged him for inability to adapt... he had enough time to get Into a VA hospital. His momma wanted a I.G. Investigation and their Congress person got them one ..
I got questioned for over an hour by a SJW ask’g the same question 4 different ways.. she was a Civ. A GS11 type and kept reminding me of it.. I put on paper and had our admin assistant type it up.. she was much faster . I gave it to the
SJW I.G. Person after giving a copy to my JAG lawyer.. where would that get me ? Just hopefully not in
Correctional custody. I seen the I.G. Copy that I gave them and compared to mine I gave to my JaG lawyer. What I didn’t know.. My lawyer informed the I.G. SJW psych inspector that they had a copy of my paper that I gave the I.G. The major waited until he knew the investigation was done.. The reason the copy I gave them didn’t get altered to favor the whiner was because I had given a copy to my JAG lawyer . The major found out they were going to twist my words at the insistence of that former airman’s congressman to make me look like the mean Shift leader that i’m NOT.. After all that a synopsis
Of the I.G. Inspection Request by the Congressman revealed we were totally within bounds (except for the
60 day TDY to Iceland). With what ever OJT training, denials of extra days off and whatever else we did to modify his behavior and make him a better Airman. What happened with him and the VA I don’t know, I hope they didn’t fall for his whiney show of character.. ..
and gave him 0% disability .. ..
