I watched my ag teacher remove hog testicles once. It took him less than 30sec for each hog.
To me, the hogs did not stop being male. Because, their DNA would be male XY not XX for female.
I suspect, it is simular for humans. Men without testicles can call themselves female. They can even be more compassionate and spend more time on the phone. But, that does not make them female.
