Barbeque without spices is like beer without water. What is your favorite go to spice? As for me, I will start this off with the most basic of spices: Salt, I use Kosher salt, sea salt, and plain granulated depending on what and how long it is going to be on the grill for. Big Kosher is good for stuff that is going to render for hours, but not the best choice for quick stuff. I have also used Kosher in a pinch when I lived in Texas and a had a freak freeze down there. Sidewalk was covered in ice, so being the good Yankee I am I broke out the 5 pound box of kosher. Situation fixed itself in a few minutes.
