I know re-assignments through MACP isn't guaranteed although, I've been at my current duty station 2.5 years. My ETS is in 2 months and I have to extend for a year. Could I request orders to where my spouse is stationed? Or is it a coin toss?

You'd have to have 2-3 years left on your contract from your report date to your spouse's location in order to PCS.
Extend for the year, you're right back into your reenlistment window the next day because you're within 15 months of ETS. You might be able to get where your spouse is, more likely the two of you end up on assignment to the same location

SPC (Join to see) MACP doesn't PCS you, that is your branch manager at HRC. MACP is an assignment consideration for you and your wife's branch managers.
As SFC (Join to see) states, you have to meet time remaining requirements to even PCS. I would talk to retention and see what options are.

If your ETS is in 2 months you will not be PCSing if you just extend. You will not have have enough time to be reassigned. If you would like to PCS to where your spouse is you can talk to your career counselor about re-enlisting to that location or somewhere closer.
