Totally shaking my head This is a case of a nervy chef trying to buck 2000 years of culinary experience by mansplaning. I have over 50 years experience of oil in the pasta water and sauce sticking and tasting great.

A Very Good Friend is a Italian Chef Who Owns a Restaurant That Has Been in Business Since 1978 , He Does Not Put Oil in the Water, He Squirt’s Extra Virgin Olive Oil on The Noodles AFTER They Are Drained, They Don’t Stick Together and the Sauce Sticks to Noodles

Most do it cause Mom did. It was supposed to keep the pot from bubbling over. Two real answers to that problem are 1) just rub oil with your fingertip around the top 1/2” inside of the pot, or 2) lay a long wooden spoon across the top of the pot while cooking. Both work. I don’t put oil in the cooking water, but use a bit on the drained pasta before serving. To each their own.
