Grew this delicious golden delicacy for years on the farm. (Just ask the racoons how good they thought it was) We steamed it in the husk.

LTC Eugene Chu: Mexican street corn on the cob is the best! Although I never use mayonnaise and instead use Cacique Crema. The amount of chile used depends on how much you want, as well as the type that you want. We mostly like Hatch green chile, which you can find ground at your local Mexican shops (or you can order it online at https://www.hatch-green-chile.com/products/green-chile-powder). In another week we should be getting the Olathe corn out of Colorado.

We usually steam our corn, but sometimes I will open the husk, insert some butter, close the husk, wrap in foil, and place on grill or in the coals of a campfire.
