I might be oversimplifying, but it is the same reason there are so many Hispanic players at present and a quite a few Asians. Young Americans of any color are less likely to be playing baseball than the kids 20, and especially 40 years ago, whereas in the Caribbean, Venezuela, Japan, Korea, and some other places the kids are still baseball crazy. It's natural the Hispanic and Asian share of baseball players has risen and American players of all colors have decreased share amounts.

Here is what I found on the demographic breakdown of MLB players.

According to Infogram | MLB Players % by Race:
White - 57.5%
Hispanic - 31.9%
Black - 7.7%
Asian/Other - 2.9%
According to Statista the average age of an MLB player is 29.1 years old.

According to UPI | Number of MLB Players by Nationality:
United States of America - 525
Dominican Republic - 90
Venezuela - 53
Cuba - 20
Puerto Rico - 19
Mexico - 8
Canada - 6
Japan - 6
Curacao - 5
South Korea - 5
Colombia - 4
Germany - 2
Australia, Hong Kong, Saudi Arabia, Taiwan, Aruba, Brazil, Panama - 1

Keep in mind that the sport has not always been this diverse. Back in 1947, there were three Latin players in the league. Today, ten different foreign countries are represented by more than three players.
