There are a lot of variables: mostly being the shape, composition, and velocity of the bullet. I saw research that stated that about 7 inches of paper would stop a 9mm bullet traveling at/about 1,250 Feet per Second. We found that a 9mm FMJ bullet would just penetrate a Level IIA police vest wrapped around sandbags, but a 230 grain .45 ACP (830 Feet per Second) and 9mm soft point would not. So to wild-assed extrapolate, I'd figure about 4 to 6 inches of paper would probably stop a .45 FMJ. Now, if you are talking about black powder pistol loads like in the old westerns, they were composed of soft lead and traveled at about 850 to 950 Feet per Second. So, something like a "real thick" Bible may have been able to stop those soft lead bullets that tend to squoosh, upon impact. (Odds are probably better, if you had been recently reading it.)
