Purple Sea Urchins Are Being Turned Into A Delicacy To Save Kelp

Purple sea urchins are overpopulating Pacific coastline with less kelp for other sea creatures. Marine biologists and ranchers now harvesting them for food (It's eggs/roe, uni, is a luxury topping for sushi).
