The first one is interesting. I've seen a lot of chefs that tell you not to over season steak. A light salt and pepper is all you should do to a good cut of meat.

Certainly one way to prepare a good cut, Jeff! I have a Memorial Day ceremony to attend shortly, and then it's a 32-ounce Porterhouse for me tonight!!!

I also put a pie plate (wide and shallow) filled with water and apple cider vinegar in the grill/broiler with the steak and baste with olive oil when I turn the staek. It does not interfere crust formation and keeps the juices inside the steak.
