Use of a "taint" team is how these matters (searches of privileged information) are usually handled. I can tell you from experience, law enforcement agencies and prosecutors take privilege very seriously, and almost always err on the side of NOT releasing a document.

They have to, because failure to respect the rights of any defendant is strong basis for appeal. It does no good to spend time and money to prosecute and have it thrown out due to taking an illegal shortcut.

I believe they are, according to an article on VOX and other sources. This process is under the supervision of the US District Judge. From Vox:
The Justice Department — specifically, prosecutors from the US attorney’s office for the Southern District of New York, or SDNY — currently plans to review the seized evidence with a separate “filter team,” walled off from the team actually working on the case. The filter team would separate out material that they think could be subject to attorney-client privilege and seek permission from either Cohen, Trump, other privilege holders, or the courts before handing over that material to the main investigative team.
Edit: Hold the bus. The Judge has asked each party to submit names for a "master" to oversee the process, and she will rule on the total plan later. She denied both Trump's and Cohen's separate requests for injunction to stop or allow Trump's team to review the documents first. We can likely expect various actions in courts as the process proceeds.
