What will I be doing until AIT begins?

The paperwork I have says my AIT doesnt actually begin until the 13th, but upon the conclusion of VBL, my report date is set for today; this evening. My question is what will I be doing for the next 11 days?

If you arrive to your AIT base/company before training begins, then you will be in what is commonly known as "Zero Week." You will probably do various admin duties and various details as assigned by the company/cadre.
