What are the main differences between 25B and 25U?

PVT Grady. I know nothing of Airborne. Luckily, I'm a 25U and 25B. If you like radios, setting up antennas, teaching classes on basic operator skills with various radios and other equipment, 25U is for you. 25B will get you into servers, Active Directory and all that jazz.
Most of us commonly consider the 25U MOS "jack of all trades and master of none". You will also most likely see action in the opposite MOS of your choice anyway. Commo is Commo in the eyes of almost everyone. If it has electricity running to it, you're expected to know how to troubleshoot it. Also, if you want to run your own Commo shop one day 25U is a good place to start.

I was a 25B (also a 25Q from back when the job was 31R but that isn't germane to the question) I currently am employed as a IT Specialist. Scope of the 25B more closely mirrors the skill set I utilize everyday on the job & with the server & AD aspects of the Bravo it might help nore if you plan on transitioning into IT after your Army service as it will if not get the the certifications that the civilian IT industry mandates now but will familiarize you with the material covered on the Cert Exams. Both MOS's will give you proficency with skills that can enable you to find good jobs when you are ready to transition back to civilian employment whether it be following an ETS or retirement.

I would take the 25U because your a signal supports. So that being said you will learn not just radios but computers assigned to the unit. Also 25U can go to RIP.
