Last month I was diagnosed with celiac disease after unintentional weight loss, and some other problems that had been going on for a while. I don’t know what that will mean for me, because my unit going on a deployment in 7 months. Will they medically discharge me or send me along with?

I would refer you to AR 40-501, but the short answer is you should be good.

Probably not. Celiac wont prevent you from meeting physical standards or prevent you from being deployable.
Sure it will impact your lifestyle but it's not career ending.

Unless, it's keeping you from performing your duties, you should be good to go.
If Leadership not saying anything to you about your condition then just let go.
Just remember to keep copies of your medical records, because you never know what might happen to you 20 years down the road.
