So I was looking at DA PAM 30-22 For separate field feeding standards when theirs garrison support from a dfac.

The feild environment and logistics will require a significantly abrevaited menu. While nutrition standards need to be met, and caloric standards possibly higher the are several practical reasons to have a different menu for feild feeding as apposed to Garrison feeding. Limited serving space on site, holding suitability of the food items, easy of serving in the feild, transportation, soldiers available to assist, easy of eating the meal in an austere environment, and there areore variables to consider beyond these.

The standard is the same as if the SM is dining in the DFAC (meat, starch, veggies, salad, bread, pastry, coffee, juice and all the condiments serving utensils) the unit is responsible for having paper plates and flatware. I hope this clears something up for you
