Can I get some info on the day to day of the MOS?

You can, if your line scores match up, your MOS at your rank is more overstrength than 31K at that time, and most importantly - you are the first one to grab one of the 5-10 slots given for reclass (as opposed to initial entry) annually.
Not impossible, but I would definitely have a backup plan that doesn't include "31K or I'm getting out."

Thanks Sergeant, getting out is definitely not one of my options. Is that 5-10 slots specifically for 31K?

That's specifically what I mean. Since opening the MOS to others outside 31B, I have seen less than a dozen open seats a year or so.
I have seen too many people who were adamant they only wanted on specific job and wouldn't take anything else. While that might work at the MEPS, it won't work in the Army. What happens is a person waits until the last moment and reenlists for less than optimal choices because there was no more time left.

Go to the HRC website and check the IN/OUT Call list (usually refers one to a MILPER message). IN/OUT calls are at MOS and grade level of detail. The specific IN/OUT call is adjusted, when necessary, based on the strength of an MOS and availability of in-service training seats. It will list which MOS/Grade one can reclass out of and which ones are available to reclass into. See AR 614-200, 3–19 for Reclassification Information.
