Killing all the younger, smaller, reproductive fish will lead to a possible extinction of certain kinds of fish. That is sad.

Capt Dwayne Conyers I understand this particular circumstance,having been a commercial fisherman for many years.Even though a large fish can be cut into smaller portions,the presentation on a plate or platter lacks the finesse associated with certain restaurants and they want smaller(whole) fillets that look better.

Doesn't help the species in a lot of cases,that is why pond raised fish got a huge following,they can be harvested at almost any level of growth,so they meet the market demands.

Lt Col Charlie Brown Me,too,Ma'am.There are certain species that have a lighter taste and better texture when small,but many of those can be obtained from fish farms and hatcheries and have no affect on the "wild" fish population.
Catfish fillets are real restaurant promoters around this area,but our lake here produces an over-abundance of catfish and the population isn't harmed even when really small fish are taken.A catfish plate usually has 2 fillets weighing 6-8 ounces each and that takes a fish weighing around 3 pounds and with channel catfish they have already reached the age to reproduce before that.
