Even with my Scot/Irish/Swedish heritage, I still do a pretty good job on Chili Rellenos, Re-frys, Quesadilla, Tacos, and Enchiladas.

When used in relation to food "authentic" is just a marketing tool. Somebody is trying to get you to eat their food and not someone else's, or their trying to say their palate is more sophisticated than the rest of us plebians.

My mom and two aunts all grew up and learned to cook while still living in Mexico. All three have different approaches to some of the same dishes. What's authentic? What's not? And my paternal aunt (Irish American) makes tamales rellenos, and corn tortillas from scratch way better than all of them. I guess to be cool, I shouldn't eat Mexican dishes made by and Irish American.

Either food is good, or it is not, and that assessment is personal to each individual.
