A village elder offered to share a dorian with me after I had surveyed his village to see if we could roll back the defensive artillery fire so they could farm more land. The village waited expectantly to see what the American lieutenant would do with it. The smell, to me, was like fried onions and thus that is the flavor profile I experienced. Smell is a principle factor in taste. Basically, we taste salty, sour, sweet, and bitter. These are the four receptors of the tongue. Disable the nose, and onion tastes like apple. There is a fifth flavor profile, umami, that epicureans use to classify foods, but most people can't taste it (and it may be an insider joke).
