I go Bleu Cheese with beef meals. Normally do Italian or Oil & Vinegar with pasta dishes.<br /><br />Like you, I think Bleu is a game changer. It's one of those food items that you appreciate when you're older. Like dark chocolate and bread. Well, to be frank, I tend to mix my dressings.
