Contrast with a burrito, where stuffing max flavors (and textures!) is the best, tacos should be simple.<br /><br />Tortilla (I prefer soft corn, but to each, their own), protein (well-seasoned - THIS is where your taco should get flavor), cheese, and ONE vegetable (always raw) for texture and flavor contrast (typically lettuce, cabbage, onion, or tomato, but I am open to others).<br /><br />4 ingredients. Both benefit from a good dollop or three of salsa or Tabasco (my parents kept me supplied with the latter while I was in Vietnam in 1967-68; the stuff made C-rations tolerable).
