I want to brew a chocolate porter and "dry hop" with hot peppers in the secondary. Just trying to figure out the right amount to use so that it is not overly spicy. I tried one recently that was along the same lines and it was almost too spicy to even enjoy. Having said that, I recently read of a microbrewery (wish I could remember where) that was putting out a coffee flavored beer. Now THAT I would definitely try! The fermentation blew through the airlock but when I sampled it during kegging it tasted great. Looking forward to the finished product next week. <br /><br />The next project will be specific hop profiles in small, six pack batches. Found a video on youtube that explained the entire process. Done and in the fermenter in less than an hour.
