I while back I had a Doc that tried to put me on such a exaggerated restrictive diet.... I fired him.. I told the VA i wanted another doctor.. i went through three until I found one that agreed with my moderated diet that allowed me to have limited amounts of different types/styles of potatoes... as far as fr fries I go I do a baked version.. i clean and cut , there is some skin. Put on a sheet tray.. season good dribble amid of olive oil and some duck fat and mix.(a friend gets for me where they do a lot of duck.. it’s all clean. I slowly render it and mix with some other fat that’s decent. When Cool enough It goes into Food film lined 1-1/2 deep pan(s) 9x12 when chilled in freezer enough I cut into cubes and dump into a zip lock bag.. and lay back into freezer. When needed I get some and thaw and remelt and dribble over fries and mix into a sheet tray and into oven they go. Nice light golden fries .. a lot of work ? Yes it is but I know what’s on the fries. Cook to translucent . Add to cut pptatoes and mix well. Add clarified chicken stock and boil potatoes to 3/4 done . Reduce chicken stock to simmer.<br />Add some heavy cream and milk (if no heavy cream, use a 5% butterfat butter<br />Land-o-Lakes is good or other AA butter.<br /> Temper cream with some chicken stock<br />Then add to the stock slowly and stirring in. Season to taste.. let it work.. some prefer to add corn(why?).. that’s their preference.. keep it pure.. <br /> For a bisque style, purée cooked potatoes, celery, onions and bacon (or a smoked ham slice fine diced). Have chicken stock/ potato water and add a limited amount to bisque but so bisque is on edge of creaminess . If you want more creamy less stock.. just add little.by little . <br />(Everybody has their preferences if the people like onion flavor, celery flavor powders[yech] I think after using the <br />“Real thing” they’d stay with it. Takes a little longer but worth the work. As one goes along .. They will refine their work methods . Not have a lot of clutter in their A/O(area of operation). I’ve seen people <br />Trying to do work with all their items just to be easier.. Have some elbow room! <br />Set up the “mise en place” the a/o go through recipe and one can figure what tools are needed(knife, peeler, measure cup, measure spoons..) A main one is cutting board. (To keep from sliding if board doesn’t have little feet use a wet towel wrung out good under the board to keep from sliding).
