LOL<br /><br />I only like real potatoes.<br /><br />Mashed with garlic and butter.<br />Baked with either sour creme and chives or butter, chives and bacon bits little salt and pepper<br />Slice them up and fry them in a skillet with onions and sometimes mushrooms.<br />Take a whole potato...slice....but not all the way through...put on baking sheet....sprinkle salt, and butter and variety of cheeses and bake it.<br /><br />so many other ways to cook potatoes. Unfortunately since I already voted I can not cast another ballot :-)<br />I really enjoyed pommes frites when I was stationed in Germany although i never did enjoy the way Northern Germans used to dip them in mayonnaise. I while back I had a Doc that tried to put me on such a exaggerated restrictive diet.... I fired him.. I told the VA i wanted another doctor.. i went through three until I found one that agreed with my moderated diet that allowed me to have limited amounts of different types/styles of potatoes... as far as fr fries I go I do a baked version.. i clean and cut , there is some skin. Put on a sheet tray.. season good dribble amid of olive oil and some duck fat and mix.(a friend gets for me where they do a lot of duck.. it’s all clean. I slowly render it and mix with some other fat that’s decent. When Cool enough It goes into Food film lined 1-1/2 deep pan(s) 9x12 when chilled in freezer enough I cut into cubes and dump into a zip lock bag.. and lay back into freezer. When needed I get some and thaw and remelt and dribble over fries and mix into a sheet tray and into oven they go. Nice light golden fries .. a lot of work ? Yes it is but I know what’s on the fries. Put a little EVOO on them, sprinkle with salt, pepper and some minced onion, wrap in heavy duty aluminum foil and put at hottest part of grill. Turn once. Response by Maj John Bell made Nov 18 at 2018 11:50 PM 2018-11-18T23:50:42-05:00 2018-11-18T23:50:42-05:00 SSgt Boyd Herrst 4139505 <div class="images-v2-count-0"></div>A good potato soup comes to mind with nice size potatoes that one can see(that would fit 2 pieces on a soup spoon(depending on the size of the spoon[ the smaller soup spoon better for a bisque or other cream soup{IMHO}]) <br />Use rendered bacon grease or ham fat(a little smoke flavor is good) mince onions and celery and a little fat to start then product as it starts to sizzle can add more fat if need. Cook to translucent . Add to cut pptatoes and mix well. Add clarified chicken stock and boil potatoes to 3/4 done . Reduce chicken stock to simmer.<br />Add some heavy cream and milk (if no heavy cream, use a 5% butterfat butter<br />Land-o-Lakes is good or other AA butter.<br /> Temper cream with some chicken stock<br />Then add to the stock slowly and stirring in. Season to taste.. let it work.. some prefer to add corn(why?).. that’s their preference.. keep it pure.. <br /> For a bisque style, purée cooked potatoes, celery, onions and bacon (or a smoked ham slice fine diced). Have chicken stock/ potato water and add a limited amount to bisque but so bisque is on edge of creaminess . If you want more creamy less stock.. just add little.by little . <br />(Everybody has their preferences if the people like onion flavor, celery flavor powders[yech] I think after using the <br />“Real thing” they’d stay with it. Takes a little longer but worth the work. As one goes along .. They will refine their work methods . Not have a lot of clutter in their A/O(area of operation). I’ve seen people <br />Trying to do work with all their items just to be easier.. Have some elbow room! <br />Set up the “mise en place” the a/o go through recipe and one can figure what tools are needed(knife, peeler, measure cup, measure spoons..) A main one is cutting board. (To keep from sliding if board doesn’t have little feet use a wet towel wrung out good under the board to keep from sliding). [as an Engineer LTC <br />Stephen Ford , I am sure you had that thought of already, Sir). &lt;~ when at a base I got saddled training some new officers that would be Food Svc Officers. <br />(IMHO) if one is going to be in a position to lead they should know as much about a job as the NCOs they have leading those men. Some of the officers didn’t show to learn.. maybe they figured they had the NCOs to do that they didn&#39;t Need to learn <br />“Minute” points of a job. [what happens when a. Report has to be done about a incident in the kitchen ? Oh sure have the MSGT write it up and explain it in the comments . What if the Colonel wants in the Lt’s own words when the Lt. Is “on the carpet” ? So if the Lt knows more themselves of what goes on than just relying on their NCOs(not meant as a slam<br />On NCOs). First hand knowledge is what I’m aiming at.. what they see with their own eyes ...
