As a 91E welder and machinist, what would I be doing on a deployment? Any chances for some combat?

It all depends on your exact location, unit mission, and Chain of Command. Depending on where you're at you may pull gate guard from time to time, but unless your unit or someone they are attached to needed some extra hands I don't know how volunteering would work.

Again, depending on other factors, you may travel from point "A" to "B" or be somewhere that falls under attack. In my experience, you would be far better served by taking your combat training seriously and being ready if something were to happen rather than having high hopes of seeking it out.

Welders are in demand to fabricate and fix things like the perimeter, culvert denials, and other things around the FOB. You will most likely be on a FOB. When you do go out on missions you will most likely pull security or if you are qualified, pull up the rear in a wrecker in case somebody hits an IED or breaks down. Otherwise yu’ll Remain on the fob and fix vehicles and infrastructure.

You may get a cordless drill and your own broom closet. If your unit goes or you volunteer to go with another group expect not to do your MOS. Try to volunteer for something fun, maybe try to get on recovery, help run a fuel point, or help the mechanics. Prove yourself useful and knowledgeable or they they will probably use you as a tower guard or KP.

I was transferred to the transportation platoon when I went downrange and was driving everything but the wrecker and didn't do any fixing on the fob and only built a couple of doors for a cop and life was pretty good and saw enough action to satisfy any and all curiosity about combat

if you are doing your job, pray there is no shooting going on, if you have to get your gear out, that takes time, if the bullets are flying, you only do what you have to, to extract the wounded, or minimal to recover the vehicle then clear the area. if your skills are not needed, then you are just another pair of eyes, and another trigger finger. Let the pros do their job and take your cues from them.

If you really wanted to see combat you should have picked a combat MOS. But any job in the Army can see combat now, get shot at on convoys, etc.
You picked a safe MOS though so it would be rare if you saw any combat.
