What can I do with a MAR3 status and no compatible MOS?

Went through MAR2 process and was auto selected for 91H30 however my PLUSHES read 213111. I was given a school date of May; station of Ft Irwin. Physically demanding job that I don’t see longevity with.

You do have a compatible MOS. You were not auto selected for an MOS by some computer program, you were given an MOS by a human being based on your line scores, clearance, rank, physical profile limitations, your MOS choices, classes available, and your Commanders recommendations. Your PULHES will remain the same and you will receive a PPCAT code indicating you were evaluated for physical standards and retained.
If the MAR2 process concluded without some critical piece of information about your physical limitations, then you can ask for an appeal. Otherwise, HRC goes off the limitations listed in your profile to determine the jobs you're capable of performing. Once you received the results of the MAR2 you are no longer an 11B, you are currently a 91H with the ASI 4A meaning you are not qualified in your MOS yet.

SSG (Join to see) it is the exact process that you are referring to. You were processed through a MAR2. This is the way the process works. If you'd like I can look you up in Retain to verify you were processed in a MAR2 and given a new MOS, but the description you gave tells me that you were.
